Surali Vadi is one of the famous Marathi snacks. It is nothing but a Marathi translation of Khandavi. We prefer to have something in between our two meal times. To avoid usually eaten snacks lets try something different. It is made of easily available ingredients, also it is easy to cook.

- 1 cup of gram flour or besan.
- Green chillies
- Cup of frozen shredded coconut
- Chopped Coriander leaves
- Salt to taste
- 1 piece of Ginger
- Pinch of Asafoetida or Hing
- 1/2 tsp turmeric powder
- 1 cup of yogurt
- 1 tsp Mustard seeds
- 1 tsp Cumin seeds
- Curry leaves
- 1 tsp Sesame seeds
How to make Surali Vadi Or Khandavi
First Step: Grind ginger and green chilies in blender.
Second Step: Add the mixture of green chili and ginger in shredded coconut.
Third Step: Add some chopped coriander leaves, salt and mix it properly.
Your Stuffing is ready.
Now let’s start preparing Surali Vadi or Khandvi:
First Step: Take 1 cup of besan and strain it through a strainer which will help to avoid forming any lumps.
Second Step: Add a pinch of Hing (Asafoetida), turmeric powder, salt and mix it well.
Third Step: Now take 1 cup of yogurt and add a cup of water and mix this with besan mixture. Mix it properly so that no lumps are formed.
Fourth Step: Add this mixture to the non-stick pan, and cook the mixture till the time it starts boiling. Once it comes to boil reduce heat to medium and cook it till mixture starts to lose the sides of the pan. Once the mixture starts leaving sides of the pan, turn off the heat.
Fifth Step: Spread the mixture on a plate or aluminum foil evenly.
Sixth Step: Keep it sometimes once mixture cools down then take out edges of mixture. Make sure the base prepared is very thin.
Seventh Step: Sprinkle a stuffing evenly on the base surali vadi prepared above. Do not over stuff the mixture.
Eight Step: Lift the edges with the help of a knife and start rolling Surali adi.
Ninth Step: Take one tsp of oil and heat it then add mustard seeds, cumin seeds, curry leaves and sesame seeds.
Tenth Step: Pour the tempering over surali vadi. Sprinkle some coconut and coriander leaves over surali vadi.
Surali Vadi or Khandavi is ready to eat now.
