Shrikhand Summer Special Desert 

Shrikhand is a well-known Desert in Maharashtrian cuisine. Friends here comes one of the season which I hate most “Summer Season”. So instead of hating let’s make this summer cool and tasty. Shrikhand is a Desert which made of Strained Curd. I personally call it Curd Ice=cream. So let’s see how to make Shrikhand at home.

Shrikhand is made out of hung Curd. So first of I will tell you to make a hung curd. It might sound little hectic but not that difficult.

Ingredients for a Hung Curd:

  • 5 Cups of fresh Dahi (Curd or Yogurt), Curd should not be soar in taste.
  • A big Bowl
  • Muslin cloth. It is a Pure cotton Fabric cloth
  • Big Strainer

How to prepare Hung Curd:

Step 1:

Take a strained and put it in a big bowl and then spread Muslin cloth on the strainer. So that it covers strainer from all side.

Step 2:

Now pour the fresh curd into that muslin. Don’t use a Soar curd it should be fresh as it is a sweet dish and soar curd might ruin the taste.

Step 3:

Take four corners of a muslin and tie it together.

Step 4:

Hold it tight or press it gently so that all whey comes out of it. You will see whey is dripping into the bowl.

Step 5:

Now hung the tied muslin with curd somewhere and place a deep bowl below it so that all whey is collected in it. You have to keep this for at least 5 hours. I prefer to keep it one whole night.

Step 6:

Next day whole whey will be collected in a bowl which can be used in other ways. Now take out curd from the muslin in a bowl. It will look like a smooth cream.

Our Hung curd is ready to use. Now we will see how to make a Shrikhand.

Hung Curd

Ingredients:

  • Sugar 8-9 tablespoon or 150 gms.
  • ½ teaspoon cardamom powder or you can call it choti elaichi powder.
  • 2 pinch of saffron(Kesar) strands.
  • Warm milk in a small bowl
  • 9-10 crushed dry fruit, it can be anything of your choice. I prefer Almonds.

How to prepare Shrikhand:

Step 1:

Take warm milk in a small bowl. Quantity must be approximately one tablespoon.  Add 2 Pinch of Saffron (Kesar). Mix it well and keep it for some time to add a color to it.

Step 2:

Take a hung curd into a bowl.

Step 3:

Add a sugar. Stir it with spoon so as to mix it well with a hung curd.

Step 4:

Add the milk mix with saffron and ½ tablespoon of cardamom powder.

Step 5:

Now if you have a blender beat the curd to make it smoother and to mix all ingredients well. Or you can beat it with spoon but it will take lot of time.

Step 6:

Once the Curd is mixed well and become smooth like a cream, pour it into a Bowl and garnish it with crushed Almond.

Freeze it for some time and serve chill Shrinkhand in this hot summer.
